Salvatore Marino is the latest in a growing crop of star natural winemakers in Sicily. Perhaps small levels of production are his secret: the maestro makes fewer than 3500 bottles per year, divided into two wines: one white and one red. De-stemmed Catarratto, temperature controlled with 5 days skin contact, well balanced acidity, delicately saline and mildly herbaceous.
