This vintage of Volo Rosso is made from 50% Cabernet Franc and 50% Cabernet Sauvignon. This wine was fermented together in tank, 100% de-stemmed fruit. After fermentation this wine was separated from its free run wine and the skins were pressed. This wine is a blend of the pressed wine and free run wine. This wine was racked, clarified and bottled, unfined and unfiltered.
