Crunchy and easy drinking hybrid red/rosé pet-nat oozes with candied cherries and red apple. Destemmed by hand and the whole cluster is pressed. After spontaneous fermentation with native yeasts, half is aged for four months in used barrels, while the other half is aged in fibreglass tanks.
